The whole reason I started baking was noticing store-bought breads sitting on shelves for months without molding. That simply is not healthy, and it was not something I wanted my family consuming. Because both my child and I live with common allergies, I dedicated myself to perfecting scratch baking with transparent ingredients and utmost care.
